In a medium mixing bowl, add ¼ cup of fresh lemon juice, 1-2 teaspoons of dried oregano, 1 minced garlic clove, and ¾ teaspoon each of salt and pepper. Whisk vigorously to combine. While whisking, drizzle in ¾ cup of extra virgin olive oil. Keep whisking until the oil is emulsified, then set aside.

In a small mixing bowl, combine the plain Greek yogurt, lemon juice, olive oil, garlic, dried oregano, cumin, coriander, salt, pepper and cinnamon. Whisk to mix. Place the chicken breasts in a zip-top plastic bag, seal the bag, and use a meat mallet or rolling pin to pound the chicken to an even thickness, about ½-inch thick.
